Local Cooking, Dinner Edition

When it's midterm, paper, or final season (or, most any other time), it can be really easy to find yourself in the infamous Mac&Cheese rut (don't worry, we've all been there). This dinner favourite of mine is super easy to make, and after making it once you'll be making it as often as you used to make that orange box stuff. Plus, almost every ingredient can be found locally (at markets, at local grocery stores, or from the farms themselves) and that feels a lot better than buying 2 weeks worth of KD for $1.99 (and that feels pretty good on a student budget). Bon appétit!
Chicken (or Tofu) Quinoa Stir-Fry
Makes 2 servings (or 1 and some left overs)
Prep time: 15 minutes
Cook time: 25 minutes

Cooking utensils you'll need:
  • A wok or large frying pan
  • A small pot
  • A sharp kitchen knife for chicken
  • Cutting board
  • A knife to cut veggies
  • Measuring cups

Local Cooking, Lunch Edition

Sandwiches can usually go one of two ways: they can be super boring or they can be masterpieces. Hopefully this local sandwich  is the latter. And while it may be a grown-up version of a childhood classic, this recipe will still bring out the kid in you. It's kind of like a Choose Your Own Adventure book, only with less paper and more bread.

The  Choose Your Own Sandwich 
Makes 1 serving (2 slices each)
Prep time: 5 minutes

Cooking utensils you'll need:
  • Two butter knives for spreading
  • One knife for cutting fruit

Local Cooking, Breakfast Edition

Breakfast is the most important meal of the day. However, when you're a student it can be awfully hard to a) remember to eat it (or anything for that matter) b) be conscious about what you choose to eat in the morning. As great as they may be, Lucky Charms and Captain Crunch are simply not going to cut it. Here is a recipe for a tasty, easy,organic, local breakfast fave that will get you up in the mornings faster than any leprechaun could.

French Toast
Makes 3 servings (2 slices each)
Prep time: 5 minutes
Cook time: 15 minutes

Cooking utensils you'll need:
  • A frying pan (cast-iron works best)
  • A larger size bowl (to dip the bread into)
  • A whisk (or fork if you don't have one)  
  • Measuring cups
